Where else besides restaurants and hawker centers can we eat in Singapore? Someone’s home through PlateCulture

I used to be adventurous in my food consumption: gulping everything edible (though I am not highly carnivorous) until my pregnancy, confinement and breastfeeding restrict my choices of food. Please don’t get me wrong.

These experiences (that I am grateful of) have widen my horizons and allowed me to embrace a new passion in food, its benefits on health, and simple cooking. I even take a course on cooking for children from Coursera.

These days, I love home-cooked meals.
I also try to minimize eating MSG-infested food served in restaurants and (some) hawker centers.
Sometimes, I feel thirsty after dining in some restaurants / food courts / hawker centers. Have I become so sensitive to MSG and excess salt?

Now, I choose to savor (instead of hastily consume like in the past) my food and constantly learn creative ways related to food and health.

Recently, I learned about PlateCulture through Anh-Minh Do of Tech in Asia. PlateCulture, a Malalysian-based start-up (founded by Audra Pakalnyte and Reda Štarė of Lithuania), is like Homedine in US and Cookening in Europe.

So, I started browsing the hosts listed by PlateCulture.

I am particularly interested by Healthy Chinese Food with Herbs hosted by Sara K of Damansara, Kuala Lumpur. Like Sara, I love pandan leaves and ginger.

Here are 4 inspirations from her (mixed with my past experience):
(1) I plan to incorporate traditional Chinese medicine principles into my cooking.
For example,
On a hot day, have a bowl of green bean soup.
On a cold day, have a bowl of red / azuki bean soup.
(2) Freshly squeezed orange juice with no water or sugar added, is indeed a simple pleasure of life.

(3) I often cook steamed fish (salmon with sesame oil or white fish with ginger), perhaps I should also try cooking foil-wrapped steam herbal chicken.

(4) Sara wrote "Dinner at home is often accompanied with relaxing traditional/new-age music with aromatherapy". Sometimes I do listen to classical music while enjoying my simple home cooked dinner, perhaps I should try traditional / new-age music too.

For PlateCulture-listed kitchens in Singapore (as of October 2013), the cost ranges from SGD 30-70 per person, which is quite expensive for our standard.

Normally, we will only spend around $15-$20 per person on our once-a-week restaurant dining. Sometimes, we are pretty happy eating at shop houses without air conditioner, and it costs us only $5++ (less than $10) per person. Many times, my husband and I will share a cup of coffee.
I do not care if people say that I am cheapskate, we do so simply because I could not take too much caffeine (but I love coffee!);
it is more about one of my values of being frugal and sustainable (environmentally friendly and not wasteful).

Of course, I understand that home kitchens (like those promoted by PlateCulture) are not professionally run restaurants. It is the interactions with the hosts and the newly formed relationships that matters, which are absence from dining in restaurants.

I really look forward to more affordable home dining experience in Singapore offered by PlateCulture!

Inspiration from Nick Vujicic

I was changing at Bishan MRT station when I decided to have a dinner at Bishan so I did not have to fight to get into the train during peak hour.

After my dinner, I visited the Popular book store where I found a book Give Me a Hug by Nick Vujicic.

The book was meant for children, yet the messages are universal across ages. I love it so much and made a mental note that this is going to be one of the must-read books for my children.

I also love the illustrations on the book (by 芝麻羔Dreamergo),
the use of brown paper.

If I do not have a family, I can be a family for someone else.


After doing house chores at kitchen, I rewarded myself with freshly squeezed orange juice which is surprisingly sweet (It was the last one out of 5 oranges that I bought last Thursday, but the first 4 were sour).
We love pleasing surprise and I am grateful for today.

Dining at lunch time.
Dining on weekdays instead of weekend.
Beware that some promotional items may be less than the normal.

Very HOT. 35 degree C.
I put my hat off to those who work outdoor e.g. Construction workers. They risk sunburn and dehydration. Thank you!

ancient Chinese ways to improve our wellbeing: physical, mental and spiritual health

An ounce of PREVENTION is better than a pound of CURE.
Choose vegetables.
AVOID too much RAW and COLD food.
Do not overdose on RICH foods e.g.

What are pleghm and damp forming food? They are rich food.
1. dairy produce: milk, butter, cheese, cream.
2. fatty meat, fried foods.
3. sugar, sweeteners.
4. excess wheat (breads, pasta)
5. concentrated juices e.g. orange juice, tomato puree.
6. peanuts, bananas.
7. excessive alcohol.
Blueroselady: the list seems to encapsulate most food that I have been consuming until Apr 2012. I must change for my health.

AVOID spoiled food.
Not TOO hot or cold: keep it BALANCEd.

Anger makes QI rise.
Fear makes QI descend.
Worry knots the QI.
Grief and sadness dissolve QI.
Joy slows QI down.

Use TALKing therapy.
Use WRITING therapy.

BALANCE yin and yang in your work and rest.
CONVALESCENCE: the forgotten secret, gradual healing (through rest) after sickness or injury.
Exercice while you work.
SLEEP is the best natural cure.
Exercise can be INTERNAL or EXTERNAL.

Tired all the time? DAMP could be the cause, besides overwork, poor diet, insufficient sleep.
How to protect ourselves from the damp effects?
1. dry ourselves properly: do not go out with wet hair, do not sleep with wet hair.
2. change cloth when sweating.
3. do not sit in damp places.
4. avoid damp forming food (sticky food, pleghm causing food): dairy products, bananas, peanuts, greasy food.

Business idea: gym for greater causes

I always wonder, besides burning my calories to keep fit and lose weight while using the gym equipment, can the energy that I work be used for greater causes? e.g. the gym equipment is designed in such a way that whenever we run on treadmill , it will squeeze orange juices to be sold for raising education funds.

I do believe that people who can afford to go to gym, will be more than happy for doing that.

For myself, I thank the generosity of my agency for providing free gym.

How to cook and use the remaining for beauty?

Today, I attended a demo on how to cook mushroom alfredo fettuccine and water melon salad.

Though I do not plan to prepare those 2 dishes (because the preparation steps are too many for me), I learned useful tips.

To prevent the lost of nutrients, cook using small heat.
Do not use big heat or high pressure.

Olive oil is best not cooked, because upon cooking, the anti-oxidant property of olive oil will be lost.
Extra virgin olive oil can also be applied on the navel of little children if they suffer from stomachache.

Do not wash them upon buying.
Wash them only immediately before cooking.

Garlic and chopped onion
Instead of heating oil then adding garlic into the pan (which may result in the release of water from garlic), we can add garlic to a bowl containing olive oil and incubate them for a while before stir-frying.
Do not over cook garlic as it will lose its anti-oxidant property.

The more you stir, the longer it takes to cook our food because cold air will go in.
Do not stir garlic too much while cooking.
Do not over stir.

Before cooking rice, soak the rice grain in water for 10 min.
This step will let the rice grain to elongate and the rice will be fluffier.

How to remember which vitamins are anti-oxidant?
vitamin A
vitamin C
vitamin E
ACE as of the ACE in the poker card.

If possible, do not use salt and sugar in cooking.

To get lemon juice, rub 1st before cutting.
To squeeze, penetrate a fork into a half-cut lemon, move up and down. This will prevent you from muscle ache. No need to spend money on orange squeezer.
Lemon may not be good for facial because it makes our skin becomes more absorptive to UV sunlight, so increases pigmentation.

Blanching is a cooking process wherein the food substance, usually a vegetable or fruit, is plunged into boiling water, removed after a brief, timed interval, and finally plunged into iced water or placed under cold running water (shocked) to halt the cooking process.

The secret of Hong Kong soup:
Instead of putting all ingredients into a pot of water and bring all to boil,
1. blanch vegetables, meat.
2. put them into a pot of boiling water, then brew.

You can also blanch in bicarbonate of soda.
Bicarbonate will soften the outer skin of vegetables, and it is the secret of getting crunchy prawn.
Use the remaining soda on your hand to get smooth skin, e.g. to scrub the elbow skin to improve the flow of Qi.

How to prepare salad leaves?
Do not cut with knife as you may tear the chlorophyll.
Instead, use hand to tear e.g. lettuce.

How to buy pomegranate? choose the one with 6 cuttings.
How to open pomegranate? soak it in a bowl of iced water (to prevent the oxidation of vitamin C), the fruit skin will float on top and be easy to throw.
How to wash pomegranate-stained apron? use vinegar and salt water.

While you are boiling water, you can steam your face (do facial). Do not forget to apply moisturizer after that.

Cooking can be a relaxing activity.
For me, the most satisfying parts are when I can decorate my food, take photos of them, and when Darling and I are happily eating them.
Honestly, I dislike washing dishes and find preparation takes time, e.g. washing, cutting.
I have tried to outsource washing to my spouse or our cleaning lady.
I have also tried to ask more home-cooked food from my mother in-law.
I am grateful.

In the country where I am living now, there is a high prevalence of colon cancer, so I must include more fiber into the diet of our family.

I am grateful for a free lunch today with blackcurrant drink. I ate many cereal prawns!

I am in love with steaming my vegetables

Steamed spinach is better than spinach soup because boiling causes loss of water-soluble vitamins like B / folate, thiamine.

To make my steamed vegetables taste better, I add olive oil after steaming. Simple and tastes heavenly.

Fun fruit juice combination:
1. Watermelon + strawberry
2. Mango + orange
3. Watermelon + carrot + orange
4. Banana + orange

To Hasenstab, most developed markets are overly indebted and overleveraged, and they offer far more risk than return potential from their paltry interest rates.

In 2007, before the credit crisis, 70% of his portfolio was in mature markets. But then he realised the US financial crisis would spread globally. Solution? he shorted the euro, while buying currencies with current-account surpluses, including CHF and JPY. He boosted holdings in countries where he expected sizable rate cuts, among them Australia, NZ, Chile, South Korea, Mexico. Anticipating the flight to USD, he hedged most of his emerging-market currency exposure.

In finance, short selling (also known as shorting or going short) is the practice of selling assets, usually securities, that have been borrowed from a third party (usually a broker) with the intention of buying identical assets back at a later date to return to the lender. It is a form of reverse trading. The short seller hopes to profit from a decline in the price of the assets between the sale and the repurchase, as the seller will pay less to buy the assets than the seller received on selling them. Conversely, the short seller will incur a loss if the price of the assets rises.
Those who short, expect price to decrease.
